Asian Slaw With Spicy Peanut Dressing

Ingredients

4  cups green cabbage (shredded/roughly chopped)

3  cups red cabbage (shredded)

1  large cucumber (chopped)

2  bell peppers

3  green onions (sliced)

2  large carrots (julliene)

1  cup cilantro/herbs of choice

 

Spicy Peanut Dressing 

3  tbsp peanut butter (nut butter of choice)

2  tbsp lime/lemon juice

3  tbsp soya sauce

1  tbsp honey

1  tbsp brown sugar

1  tbsp sesame oil

1  tbsp sriracha

1  tsp red pepper flakes

2 cloves garlic (paste-like)

1  tbsp salt and pepper

1/2  cup of toasted peanuts or nut of choice (sprinkle on top)

 

Instructions

1.  Get yourself a good knife and a big bowl. Chop or shred all ingredients. Place all in a bowl and toss. It’s that simple.

2. Place all dressing ingredients into a bowl and whisk, taste and add extra ingredients to your liking. I prefer my dressing on the sweeter side.

3. If you are planning to serve this salad for dinner you can add dressing immediately. This salad will stay fresh and tasty all night and so easy to prep in advance. If you are meal planning, portion your salad into containers, adding a bit of dressing into a separate dressing container for each day. This salad will be tasty and crunchy all week long.
