The Perfect Summer Salad For All Those Salad Lovers And Almost Salad Lovers. Roasted Brussels Sprout Salad With Dates, Apples And Topped With A Balsamic Vinaigrette

It’s HOT and everyone is hungry! Look no further than my amazing Roasted Brussels Sprout Salad. I know what you are thinking, roasting veggies on a hot summer day is nuts!! I literally only cook ( heat on ) in the morning during hot summer days. The wonderful part about creating this delish dish is that I used my air-fryer. For those that are looking for great use of an air-fryer, this is definitely one of them. Tossing the brussel sprout in the air fryer for under 11 min will keep your home cool during those rising temps. Prepping and creating this dish will take 20 minutes, making this dish a must for a family dinner or get-togethers. Play around with creating this salad, substituting apples for another crunchy fruit you enjoy or dates for perhaps cranberries. Stay cool this summer and ridiculously fed, Check! Roasted Brussels Sprout Salad Topped With Dates, Apples And Drizzled With Balsamic Vinaigrette

Ingredients

3  cups brussels sprouts

1  medium granny smith apple

1/2  cup dried dates

3   tbsp sunflower seeds ( toasted )

1   tbsp fennel seeds

1  tbsp salt and pepper

Balsamic Vinaigrette Dressing

3  tbsp olive oil

2  tbsp balsamic vinegar

1  tbsp honey

1  tbsp salt and pepper

 

Instructions

1.  Wash brussels sprouts and remove all brown or damaged leaves. Cut sprouts into halves and for larger pieces into quarters. Pat dry gently. Toss sprouts in olive oil, salt, pepper, and fennel seeds and pre-heat the air-fryer or oven for roasting.

2. Place sprouts into the air-fryer at 370 deg F for 5 minutes and then 400 deg F for another 5-6 minutes. Keep an eye on these gems, give them a shake halfway through. Set aside and let cool while prepping all other ingredients.

3. Chop up green apples. You may dice or slice to your own liking. Chop dates into bite-size pieces, mix all ingredients for vinaigrette into a bowl and whisk away.

4. This is the best part! On a large flat plate assemble the salad. Placing all sprouts down first, topped with dates, apples and toasted seeds. Drizzle this delicious salad with the balsamic vinaigrette you made and serve. This salad will keep for 3-4 days in the fridge and keep you cool this summer. Enjoy!!
